Ingredients
For the Lemon Brownies:
1 cup all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
For the Lemon Glaze:
1 cup powdered sugar
2 tablespoons lemon juice
1 teaspoon lemon zest
Instructions
Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a mixing bowl, whisk melted butter, sugar, eggs, lemon juice, lemon zest, and vanilla until smooth.
In another bowl, sift together flour, baking powder, and salt.
Add dry ingredients to the wet mixture and stir until just combined.
Pour the batter into the prepared pan and spread it evenly.
Bake for 22–25 minutes, or until a toothpick comes out mostly clean.
Allow to cool completely on a wire rack before glazing.
To make the glaze, whisk powdered sugar with lemon juice and zest until smooth.
Spread glaze over cooled brownies, let it set, then slice and serve.
Notes
For extra lemon flavor, add a few drops of lemon extract.
Store leftovers in an airtight container for up to 3 days at room temperature or up to 5 days in the fridge.
These freeze well (without glaze) for up to 2 months.
